Chinoiser si n\u00e9cessaire. Obtenir une pulpe de carotte \u00e0 12% de MS.<\/p>\n<p><strong>2<\/strong> Chauffer la pulpe \u00e0 50\u00b0C et incorporer la pectine m\u00e9lang\u00e9e \u00e0 70 g de sucre.<\/p>\n<p><strong>3<\/strong> Faire bouillir, ajouter le sucre restant. Reprendre l&rsquo;\u00e9bullition et ajouter le <a title=\"Sucre inverti (D\u00e9finition)\" href=\"http:\/\/cuisine.journaldesfemmes.com\/definition\/300158\/sucre-inverti.shtml\" target=\"_blank\">sucre inverti<\/a> puis le sirop de <a title=\"Glucose (D\u00e9finition)\" href=\"http:\/\/cuisine.journaldesfemmes.com\/definition\/300155\/glucose.shtml\" target=\"_blank\">glucose<\/a>.<\/p>\n<p><strong>4<\/strong> Cuire \u00e0 105\u00b0C environ<\/p>\n<p><strong>5<\/strong> Ajouter l&rsquo;acide et bien m\u00e9langer.<\/p>\n<p><strong>6<\/strong> Couler en cadre 30&#215;30 sur 1 cm d&rsquo;\u00e9paisseur, ou dans des empreintes dans l&rsquo;amidon, ou dans des moules souples. Laisser reprendre corps et d\u00e9tailler \u00e0 froid.
