{"id":375,"date":"2012-04-10T10:24:34","date_gmt":"2012-04-10T08:24:34","guid":{"rendered":"http:\/\/amaplabergerie.org\/?p=375"},"modified":"2012-10-02T12:32:12","modified_gmt":"2012-10-02T10:32:12","slug":"risotto-au-poireau-et-potiron","status":"publish","type":"post","link":"https:\/\/amaplabergerie.org\/?p=375","title":{"rendered":"Risotto au poireau et potiron"},"content":{"rendered":"<p><strong>Pour 4 personnes\u00a0:<\/strong><\/p>\n<p>1 litre de\u00a0bouillon \u00a0de volaille (pr\u00e9par\u00e9)<br \/>\n225 g de\u00a0riz \u00a0rond carnaroli ou\u00a0arborio<br \/>\n2 blancs de\u00a0poireau \u00a0\u00e9minc\u00e9s<br \/>\n800 g de chair de\u00a0potiron , d\u00e9taill\u00e9e en petits d\u00e9s<br \/>\n50 g de\u00a0beurre \u00a0doux<br \/>\n2 gousses d\u2019ail , \u00e9pluch\u00e9es et \u00e9minc\u00e9es<br \/>\n3 cuill\u00e8res \u00e0 soupe d\u2019huile d\u2019olive \u00a0vierge extra<br \/>\n50 g de\u00a0parmesan \u00a0r\u00e2p\u00e9<br \/>\nSel de mer<br \/>\nPoivre noir\u00a0 du moulin<\/p>\n<blockquote><p><strong>Pr\u00e9paration<\/strong><\/p>\n<p>Faire fondre la moiti\u00e9 du beurre (25 g) dans une grande casserole et y faire suer le poireau \u00e9minc\u00e9 avec l\u2019ail. Faire r\u00e9duire sans faire brunir, sur feu tr\u00e8s doux.<br \/>\nY incorporer ensuite le riz et les d\u00e9s de potiron, et faire dorer \u00e0 feu vif en m\u00e9langeant bien pendant environ 5 mn.<br \/>\nMouiller ensuite la pr\u00e9paration avec 3 louches de bouillon chaud, et laisser s\u2019\u00e9vaporer, en remuant constamment.<br \/>\nRajouter une louche et demie de bouillon chaud, d\u00e8s qu\u2019il n\u2019y a plus de bouillon pr\u00e9sent dans la casserole.<br \/>\nPoursuivre cette proc\u00e9dure pendant 12 \u00e0 15 mn\u00a0; pendant le restant du temps de cuisson du riz.<br \/>\nNe rajouter du bouillon qu\u2019\u00e0 partir du moment o\u00f9 le bouillon pr\u00e9c\u00e9demment ajout\u00e9 a \u00e9t\u00e9 totalement absorb\u00e9 par le riz.<br \/>\nD\u00e8s que le riz est cuit (mais qu\u2019il est encore un peu ferme sous la dent) retirer la casserole du feu et y ajouter le restant du beurre.<br \/>\nAjuster l\u2019assaisonnement en ajoutant sel et poivre.
